Here's another recipe...maybe I'm just hungry!!!

Chocolate Chip Pecan Cheeseball

8 oz. cream cheese, room temperature
1/2 C. butter, room temperature
1 C. powdered sugar
2 T. brown sugar
1/4 tsp. vanilla flavoring
1/2 C. plus 3 T. mini chocolate chips
1/2 C. pecans, finely chopped

In a mixing bowl cream the cream cheese and butter until fluffy. Add the powdered sugar and brown sugar and blend well. Mix in the vanilla and 1/2 C. mini chocolate chips, scraping the sides.

Place the mixture into small bowl lined with plastic wrap. Chill for at least 2 hours. With floured hands, shape into a ball.

Mix the remaining 3 T. chocolate chips and chopped pecans and roll the ball in the nut mixture. Wrap in plastic wrap and refrigerate until serving.

Lemon Drop Cheesecake Ball

8 oz. cream cheese, room temperature
1/2 C. butter, room temperature
1 C. powdered sugar
2 T. brown sugar
1 tsp. lemon flavoring
3.5 to 4 oz. lemon flavored candies, crushed

In mixing bowl cream together the cream cheese and the butter until fluffy. Add the powdered sugar,
brown sugar and lemon flavoring. Scrape sides of bowl. Mix in 3 T. crushed lemon drops.

It was so much fun gathering with Robbie and his family and Richard and his family!

We hadn't seen Robbie and family for way too long! We could
tell for certain that Alma (top right) had grown at least a foot!!!

busy with the Junior Livestock show - so he cut out early to
wash his pig!!! By the way he got in the finals with his

Have you ever had a dream that was so vivid it seemed real? Well, the above picture is such a dream! I created this picture in my mind, have had it there for years, and then...there it was! My dream came true, well, most of it!! Now, I need to create the money to purchase this piece of property, and then build my dream home. I have imagined sitting outside on the patio, gazing at the beautiful meadow, enjoying the quiet, and smelling the fragrant air. I have even pictured myself there with family all around, BBQing, talking, and laughing together!

That is just one of my dreams in my pocket - what are yours?

Did you ever notice that when you are on a diet, everything you see (that you are not suppose to have) you want!! Well, here is one tasty dish I plan on making one of these days!!

Red Velvet Pancakes!!

1 cup all purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
3 tblsp. white sugar
2 tblsp. unsweetened cocoa powder
1 large egg, lightly beaten
3/4 cup buttermilk
1/4 cup creme fraiche or sour cream
3 tblsp. unsalted butter, melted
1 tblsp. red food coloring
1 tsp. vanilla extract

Mascarpone Spread:
4 oz. softened mascarpone
2 oz. creme fraiche
2 tblsp. white sugar
1/2 tsp. vanilla extract
1/2 tsp. lemon zest

In a large bowl whisk together the dry ingredients. In a separate bowl whisk together the egg, buttermilk, and creme fraiche/sour cream, melted butter, red food coloring, and vanilla extract. Add them together and whisk just until combined. A little lumpy is fine. Heat a frying pan or griddle over medium high heat. When hot add butter or oil to grease, followed by a small scoop of the batter. Wait for the pancake to bubble (2-3 minutes), flip and cook for a minute or two more. Meanwhile, mix all of the ingredients in the mascarpone spread together, and use to garnish the pancakes with some maple syrup. Oh Yummmmmmmmmmmmo!!

Can't wait to try these. I'll have to let you know how they turn out!! These would be a wonderful Mother's Day treat, or Birthday breakfast for someone special - especially if they like chocolate!!

In an attempt to find out some information about my new cubboard I began to wash off the layers of dust that had accumulated on this precious piece of furniture. It had been neglected for some time, and as I wash it with Murphy soap, I began to bring it back to life. I could see the faded patina, although instead of growing more beautiful with age, it had begun to show the signs of neglect. I pulled out the drawers, and the desk looking for some clues; much to my excitement there in the back of the desk was a piece of paper. You can see from the photo it has a name and address of someone whom at one time in their lives lived in Chicago, IL. I also found the date this piece was made - Dec. 30, 1946.

Next Christmas will be even better. Our daughter Billie Jo and her family are planning to come home for Christmas!! Now we will really have a housefull!! No pressure Billie, but we will have a count down, and make sure everyone knows!!! LOL!!

My love to all of our family. We really miss Melissa and the girls, Bailee, Jasmyn, and Savanah. Plus our kids in Georgia - David, Stacy, Elizabeth, and Caitlyn - we wish so much that we could see all of you.

I love this time of the year! I love the music, the decorations, the food, the parties, and most of all I love the reason for the season!! It makes me focus on what is really important in my life, and that is my family! Spending time with them means the world to me, and I look forward to our annual gathering. I try to have things up and ready by Thanksgiving - thus my title of getting ready one piece at a time. Since I'm the only one that gets involved here - it takes me a little longer to get things pulled out, put up, and boxes put back! So, I'll be posting...a little at a time...

My 40th Class Reunion!

Last week I flew to Oregon for my 40th Class Reunion. Words can't express the feelings I had reconnecting with old friends. My only disappointment was that I didn't have more time to visit. A few hours is never enough time to share with friends the events of your life. There is no way to catch up on 20 yrs. of life in a few hours. I realize that friendships take time to nourish, so, I my plan is to take more time to keep connected. Here are a few pictures taken at our Reunion.

My Sister's Boys!!

These young men are my sister Patty's boys! These guys are constantly on the go, and are busy with all kinds of sports. They are amazing bowlers and baseball players, and their dressers are lined with trophies

to prover their expertise. Scott, Patty's middle boy has an amazing penmanship. He showed me

some of his writing when I was there a few weeks ago, and boy was I impressed!

There house is a bussle between the three boys and all of their friends,

I don't know how Patty keeps up with all of it!!

I have a friend at work who's son (Caleb) and wife are in the Peace Corps in eastern Uganda. The widows in this village make the baskets. Caleb and his wife brought some of these baskets back to the states, and I feel very lucky to have been able to purchased one of them. The funds made by the purchase of these baskets go back to the ladies to help them support their families.

My Dream...a cut flower garden...

I have always wanted to have a cut flower garden. I love being able to have fresh flowers when every I want. Last Fall I planted a bunch of flower bulbs. These beautiful Gladiolas are a few of what have bloomed. Our yard is not very big, so I have tried to take advantage of the space I have. One of these days, I'll have more space, and I'll plant a BUNCH of flowers!! Until then, I'll enjoy this bouquet!

Last Fall I decided to try my hand at growing garlic, so, I planted a

few cloves of garlic in the hopes that they would grow! Sure enough

they did!! Some of the heads aren't as big as others, but I still

think it will be yummy when it's time to cook. Plus, we

just picked our first zucchini! I planted green

and yellow zucchini this year. Tonight we are having

a corn and fresh basil tart and fried zucchini!

Just recenly I was introduced to a pastry called Kouing-aman. It's a French pastry filled with butter, similar to a croisant. The pastry is coated with sugar and when baked, it turns into a crunchy toffee shell, with a soft buttery interior. Yummmmmmmmmmm! My brother Steve told me about a bakery in Salt Lake City that was featured on the Food Network channel. One of the tasty pastries they showed was the Kouing-aman. Well, I went to Salt Lake City last week, and thought I would stop by this bakery to see what this yummy pastry was all about. I have to say the price of this pastry was $5.00!!! It cost so much, I figured that it was worthy enough to serve on a piece of china!!! LOL!! But, I was too lazy to unpack a small china plate as a temporary resting place for this delicousy!

You know the saying, "a minute on your lips, forever on your hips"...well, I would say this pastry fits the bill!!! It was amazingly flakey, not to sweet, and the outer crust was crunchy and almost a little carmeled. Definately something you want to wrap your lips around often!!!

I told Steve (my hubby) that I'm in the wrong business! I love to bake! I read an article that the owner of Les Madeleines in SLC has sold 12,000 of these tasty delights in the last three weeks!!! I would be a laughing stock of my community if I tried to sell a pastry that cost $5.00/ea. I guess it's all about location, location , location!!

Steve and I were coming down our driveway in Mapleton, and low and behold, we saw these cute little baby racoons!! We watched them bask in the sun for several days. Steve figured that their Mother had probably gotten killed. So, as you can see, I tried to feed them bananas!! By the end of the week, these cute little critters were gone. The optimist that I am, I hope they moved on to another burrow.

Steve and I went to the Japanese Garden in Portland, Oregon and it was amazing. The grounds were landscaped and groomed to perfection. This is just one of the areas we saw. I'll post a few more later. If you ever get to Portland, I would recommend taking the time to visit this spectacular garden!

A Garden Dinner Party...

I haven't ever entertained much - but always wished I had. So this summer I want to venture out and have a Garden Dinner party for all of the women friends that I am so lucky know. Some are co-workers that I now work with, some have since retired, some are family members, and some are neighbors.

These ladies have entered my life in a positive way and have influenced me with words of wisdom, encouraged me in my endeavors, made me laugh, have been mentors, or have been a sense of support in times of need.

It seems like our lives get so busy that we don't take time to linger over conversation. Our communication tends to be a brief note on Facebook or shoot an e-mail and call it good. I'm hoping this Garden party will bring back the slower pace of time where we lingered longer, talked, laughed and shared with each other.

My hopes are to start an annual event. Living in such a small community it's easy to say I know a lot of ladies and so far my invitation list is about 90 strong!!! I don't know that our back yard will hold that many! So, I'll probably have to pare it down a bit!! LOL!!

It is the focal point in our back yard, and I can't wait until it fills in, it is beautiful now, it will be spectacular in another month!

There has been so much yard work to do in our yard this year!! Last year we had some cement work done, and things were torn up all summer long. So, now the task of getting the yard put back in order! I love this time of the year because all of the perennials are out and there is so much color to chose from.

I finally got smart and started planting perennials! These

beautiful little flowers are some of the first to

show their faces in my yard! I just love them.

I have a bunch of daffodils that come up faithfully

every year. I didn't plant them, they were already

planted when I bought my home. I swear these

bulbs have burried themselves 4' deep!

I watch for them to pop up every Spring!

Kiera's blessing was a very special day. Kiera was blessed by her Grandpa, Bill Huff. She had her Great Grandpa and Great Grandma there, along with her Grandpa Isley, Grandma and Grandpa Jensen, and her Aunt Becky and Uncle Matt. Kiera's big brother Keaton was there too - he did pretty good in church, but as a 2 yr. old would have it - he kept saying, "are we done"... We had everyone over to the house for lunch, and it was so nice to have an opportunity to visit with everyone.

My sister Debbie came for a visit and

we went to a really fun place - Gardner Village.

We went to tea there last year, but to our dismay,

the shop had moved, and they were no longer

offering afternoon tea. We did locate the retail

shop, and Debbie found this wonderful hat!

It was meant just for her!! She looks devine in hats!!

Another shop at Gardner Village is filled with

everything feminine!!! They have the most

magnificent hats you have ever seen!

A cup of tea!

There is an artist who's name is Susan Wheeler. About 7-8 yrs. ago I was introduced to her art work by my sister Debbie. I was so gravitated to her art! You get drawn in, it's as if you can feel yourself as one of the cute figures. This particular picture reminds me of time spent with both of my sisters. I have learned to appreciate the experience of having tea. It's a social event, meant to linger over conversation. At first, I found myself hurring through things, like I always do. But one afternoon with my sister Debbie I actually stopped myself, told myself to slow down, enjoy the time, and relax! Before I knew it, we had been sipping on tea and visiting for over an hour, it was wonderful! It is something I am now introducing to my Grand daughters. There is something magical about having tea. I remember Mom making tea for me and serving me white bread and butter with sugar on top. OMG, that seemed to be the most amazing treat to me. Now days, "Afternoon Tea" is a little more formal, but still filled with special treats - especially the treat of time well spent with those you love!! The Holidays...

I love this time of the year. My family jokes because I start listening to Christmas music waaaaaaaay to early! For some reason, it just puts me in a happy mood! December started out visiting my daughter and her family in Texas - oh, that was a wonderful trip.

But, when I arrived home, I received the sad news that my oldest Brother Rick had passed away. The sadness that overcomes you when you lose a loved one is hard to explain. Rick was a wonderful Brother - very positive, and loved his family so much. I will miss being able to talk to him - he was quite a yaker!! He left behind four wonderful children, son Chris, and daughters Angie, Laura, and Kimmy.

We did our best to pull our emotions together and finish out the Christmas season. Below are a few pictures of our family. We wish everyone a New Year filled with an abundance of family time, and the blessings that go along with giving!

I traveled to Texas the first week in December to see our Daughter Billie Jo and her family! I had a wonderful time! I have to admit the best part was spending some quality time with Billie! but none the less, it was way too much work! I will have

to smile every time I open a bottle. I'll savor the flavor

and appreciate not only the work involved for canning them,

but also the countless hours we spent in our garden!

The tasty things were worth it!!

Take a look at these tasty huckleberries! These

are right behind the house. How lucky can I be!!

All I have to do is go out the front door to pick

huckleberreis and blackberries!!

Don't you love these lacey flowers. My husband

calls them weeds! I told him they are wild flowers,

he looked at me with that funny look he gets and says,

"what ever".

This is our Family! We gathered at Rotary Park in Park City

at the end of June. We had family come from Georgia,

Texas, Oregon, and Utah. Please click on the photo

members missing. One is Lucas (who is taking the photo)

and Annie's little guy Keaton. Keaton wanted to play in the

mud instead of pose for a picture, so, we might have

to photo shop both Lucas and him into the picture!! :)

Lucas graduated with an Art major. He will

be teaching Photography next year. How lucky

is that? He's doing what he loves to do!
